Pancakes for Breakfast!

Fam favorite from author Tomie dePaola in Pancakes for Breakfast

PANCAKES

  • 2 cups flour
  • 2 t baking soda (3/4 t if using buttermilk)
  • 3 T melted butter
  • 3 T sugar
  • 1 t salt
  • 3 eggs (separated with whites beaten for fluffier pancakes)
  • 2 c milk (or buttermilk)

INSTRUCTIONS

  1. Sift dry ingredients.
  2. Beat eggs with milk and mix with dry ingredients just long enough to blend.  Batter SHOULD be lumpy!
  3. Add eggs whites if beaten separately.
  4. Stir in butter and cook.
