Servings: 2 big ones
Ingredients:
- 4 eggs
- 2-4 medium tortillas
- 1 medium avocado
- 2 tablespoons chopped oregano
- 1 lime
- Salt and pepper
- 1 teaspoon cumin
- 1 can black beans
- 2 cloves garlic
- ½ cup salsa
- Olive oil
- ½ teaspoon chili powder (optional)
Instructions:
Heat some oil in a nonstick pan, fry two eggs sunny side up, yolks runny, season with salt and pepper, remove, do two more
Heat some oil over medium-low heat in a small saucepan and add the black beans. Once the beans are hot add some salt, the cumin and the garlic. Continue cooking for a couple minutes, or if you want refried beans, cook longer and mash the beans with a wooden spoon as you go.
Heat another pan, cast iron if you have one, over medium-high heat. Crisp the tortillas, both sides, in the pan. Or do this right over the flames if you have a gas stove, just don’t get distracted or walk away while you’re at it.
Slice the avocado and season with salt and some of the lime juice.
Plate the eggs, beans and avocado on a tortilla, season with some lime juice and chili powder. Top with salsa and cilantro,
