INGREDIENTS
- 2 1/2 c/350g flour (plus 1T for fruit)
- 1 t baking soda
- 2 t baking powder
- 1/2 t cinnamon
- Pinch salt
- 1 1/3 c/9.25 oz brown sugar
- 2/3 c/140 g vegetable oil
- Optional 1 T lemon zest or 1 t lemon extract
- 1 egg
- 1 c/240 g buttermilk
- 2 t vanilla extract
- 1 1/2 c fresh or frozen chopped fruit tossed with 1T flour
- Lightly roasted Chopped nuts
INSTRUCTIONS
- Preheat oven to 400.
- Whisk brown sugar, vegetable oil, lemon zest/extract, egg, buttermilk, and vanilla extract.
- Add flour to wet mix and whisk until just absorbed.
- Mix fruit into batter quickly.
- Scoop into 12 cup greased muffin tin and top with 1 T chopped nuts.
- Bake for 14 minutes @ 400, turning once.
- Turn oven down to 350 and bake until firm to touch, 5-10 minutes.
