Pancakes for Breakfast!
Fam favorite from author Tomie dePaola in Pancakes for Breakfast
PANCAKES
- 2 cups flour
- 2 t baking soda (3/4 t if using buttermilk)
- 3 T melted butter
- 3 T sugar
- 1 t salt
- 3 eggs (separated with whites beaten for fluffier pancakes)
- 2 c milk (or buttermilk)
INSTRUCTIONS
- Sift dry ingredients.
- Beat eggs with milk and mix with dry ingredients just long enough to blend. Batter SHOULD be lumpy!
- Add eggs whites if beaten separately.
- Stir in butter and cook.
