Squilly’s Chicken

INGREDIENTS

  • 4 Boneless chicken breasts, 8 halves, skin removed
  • 2 cloves Garlic, minced or pressed
  • 1-1/2 – 2 t Salt (optional)
  • 2 t Ginger (grated)
  • 1 t Pepper (freshly ground)
  • 1 t Ground cumin
  • 2 t Curry powder
  • 1 t Dried oregano leaves
  • 4 T Soy sauce
  • 4 T Vegetable oil
  • 1 T lemon juice

INSTRUCTIONS

  1. Place chicken breasts in a single layer in glass or ceramic pan.
  2. Mix garlic and salt. Blend in ginger, pepper, cumin if used, curry powder and oregano.
  3. Blend in the soy sauce, oil, and lemon juice.
  4. Spread the mixture over chicken breasts, coating each piece well.
  5. Cover. Refrigerate 3 hours or as long as 1 day.
  6. Heat barbecue coals until they are evenly coated with white ash.
  7. Place chicken breasts on grill. Cook about 5 minutes on each side. Remove from grill.
